Minted Green Pea Soup


Minted Green Pea Soup

4-6 Servings
A declicious chilled soup.

Ingredients:

1 Tbsp butter
1 small onion, diced
4 cups vegetable broth or water
5 cups peas (fresh or frozen)
2 Tbsp chopped fresh parsley
2 Tbsp chopped fresh mint leaves
2 tsp lemon juice
1 tsp sugar
salt and freshly ground pepper
1/4 cup heavy cream (optional)
Chopped fresh chives and mint for garnish

Directions:

Press Saute on the Instant Pot and when the display says Hot, add the butter and onions. Saute, stirring frequently, for a few minutes until softened but not browned. Hit Cancel.

Add the broth (or water), peas, parsley, mint, lemon juice, sugar and salt and pepper to taste. Stir well to get any browned bits up off the bottom of the pot. 

Close the lid and set the valve to Sealing. Push Pressure Cook (or Manual) and adjust time using the + or - button to get to 0 (zero) minutes. When it beeps that it's done, flip the valve to Venting for a quick release and when the pin drops, remove the lid.

Use an immersion blender to puree the soup in the pot or pour it into a food processor or blender to puree until smooth. (If you want to go full-on French cuisine here, strain the soup to remove solids.) 

Stir in the cream, if using. Taste and add more salt and pepper if needed. Serve chilled, topped with a swirl of cream and a sprinkle of chopped mint.
